I will be applying to University next year and was wondering if being fluent in a second language (Polish) has any advantages when being considered for acceptance. I should mention I will likely be going into the sciences (Health Science, Life Science ect)

most likely not. some universities ask for extra information forms and you could mention those there but for most general programs that aren't considered competitive they usually don't even require those for admission, so universities will probably not know about it in the first place.

I know its beneficial only for very specialized programs that focus on international something; for example at Ivey when I applied they asked if you were applying to their international program or their regular program. In their supplementary forms they will ask you to list levels of fluency in all languages you speak as well as provide some rough estimates of experiences aboard.

It's something you can maybe mention on supplementary forms for some of the other programs, but I don't think it would help much. If you then apply for Medicine or some other health related profession afterward, it may help a bit.

I don't think Polish will help you with getting into healthsci/lifesci programs as, quite frankly, being bilingual isn't that much of an advantage at this stage of your education. In any case, they don't ask you to list your languages on most supplementaries. I do know that there are scholarships available through certain organizations if you're Polish, however nearly all require you to be affiliated with a Roman Catholic church. If you're going to be applying to professional schools, Polish might help you although it isn't the languages "of choice" (unless of course you're applying to go to school in Poland) In Canada, it's much more beneficial to know French.

I know of many universities who let you replace a course requirement with a second language course, although fluency is not generally necessary.

Fluency is not necessary and most of the time not allowed if you want to take a second language at university. For example you cannot take intro Spanish, German or French or any other language if you are fluent.
To answer the OP: I think speaking many languages fluently helped me get one of the top scholarships at Queens. I may be wrong but they seemed to be impressed. So along with many other things your ability to speak Polish may help you get a scholarship.

It can pop up on supplementary forms. I know the UofT Scarb Management SAF asked if other languages were known and I believe it asked about fluency.

In any case, Polish is a great language, very pretty! Much more expressive then English (as most other European languages)
